His first task has been to revamp the menus at the popular tapas restaurants La Parada, in the Cape Town CBD on Bree Street & on the main road in Kalk Bay.
Condé, until recently a lecturer at the prestigious Basque Culinary Centre in San Sebastian, has for years been at the forefront of Spanish alta cocina, mastering the techniques that contributed towards making elBulli into the world famous icon of modern gastronomy.
In 2003 Andres Condé won the award for best young chef of Navarra, Spain. The prize was a 2-month internship at elBulli after which he stayed on for a further 6 years. After a season in the hot and cold kitchens he moved on to pastry, his true love, where he remained for two years.
